Ingredients For Malai Koftas:
2 cups grated paneer (cottage cheese)
2 boiled and mashed potatoes
1/4 cup corn flour
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp garam masala powder
Salt to taste
Oil for deep frying
For Gravy Malai Koftas:
2 cups finely chopped onions
1 cup tomato puree
1/2 cup fresh cream
1 tsp cumin seeds
1 tsp ginger paste
1 tsp garlic paste
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala powder
1 tsp red chili powder
Salt to taste
2 tbsp oil
Coriander leaves for garnish
Instructions of Malai Koftas:
1- In a large mixing bowl, combine grated paneer, mashed potatoes, corn flour, cumin powder, coriander powder, garam masala powder, and salt. Mix well to form a smooth dough.
2- Divide the dough into equal portions and shape them into small balls. Heat oil in a deep frying pan and fry the koftas until golden brown. Drain on a paper towel to remove excess oil.
3- To make the gravy, heat oil in a pan and add cumin seeds. Once they start crackling, add finely chopped onions and sauté until golden brown.
4- Add ginger paste and garlic paste and sauté for a minute. Then add tomato puree and cook for a few minutes until the raw smell of tomatoes disappears.
5- Add coriander powder, cumin powder, garam masala powder, red chili powder, and salt. Mix well and cook for another few minutes.
6- Add fresh cream and mix well. Cook for a minute and then turn off the heat.
7- Transfer the gravy to a blender and blend it until smooth. Then pour the gravy back into the pan and bring it to a simmer.
8- Add the fried koftas to the gravy and simmer for a few minutes until the koftas are well coated with the gravy.
9- Garnish with chopped coriander leaves and serve hot with naan, roti or rice.
Tips of Malai Koftas:
Make sure to drain the excess water from the grated paneer before using it in the koftas.
Add corn flour in small quantities as required to make the kofta dough smooth and firm.
You can use store-bought tomato puree or make it at home by blending fresh tomatoes in a blender and then straining it to remove the seeds and skin.
To make the gravy more flavorful, you can add some kasuri methi (dried fenugreek leaves) while cooking.
To reduce the calories, you can bake the koftas instead of frying them.
